Once we plant recurrent herbs in our gardens , they will return every year . In fact , in warmer clime they may not even loose their leaves or become dormant in the gloaming and winter – they are enjoy year round . In my zone 7 Maryland garden , I normally cut perennial herbs for their final harvest home in the former drop to later fall , about six week before a voiceless freeze so that their woody stems have time to heal over . A worldwide formula of pollex is to glean repeated herbaceous plant by cutting them back by about one - third to one - one-half their size , though it does alter with each type of herbaceous plant . I often take my oregano or lemon balm back to just above land level , while I never do that to my rosemary or sage plant .
